What evidence indicates that some asteroids have differentiated?

Some meteorites that have been observed to fall can be traced back to specific asteroids. Even among those whose specific origin cannot be pinpointed some show signs of having been differentiated, i.e. separation into more dense and less dense layers. This would presumably occur only on larger asteroids, but is still an unexpected finding.
